Nova Scotia Lobster Rolls


    • 4 Schär Hot Dog Rolls  
    • ¼ cup mayonnaise 
    • 1 tsp lemon juice 
    • 1 tsp dried tarragon 
    • ½ tsp salt 
    • 1 pinch cayenne pepper  
    • 2 tbsp scallions, chopped 
    • ¼ cup celery, finely chopped 
    • 1 ½ pounds cooked lobster meat, cut into small chunks 
    • 4 large lettuce leaves


    Combine mayonnaise, lemon juice, tarragon, salt and cayenne pepper in a medium bowl. Add scallions and celery and mix well.
    Add lobster, then stir gently until lobster pieces are coated with the mayonnaise mixture.
    Line each hot dog roll with lettuce. 
    Spoon the lobster mixture into the rolls.
