Piled High Left Over Turkey Casserole

    Ingredients:

    • 1/2 Loaf of Promise gluten free white bread
    • 2 Tablespoons corn flour
    • 2 Tablespoons Milk
    • 400 ML Milk
    • A cup of frozen peas
    • A cup of frozen spinach
    • A handful of Kale
    • 2 cups of Leftover Turkey
    • Sprigs of Thyme
    • 2 tablespoons of melted butter

    Instructions:

    Mix cornflour with milk to make a paste then whisk remaining 400 ml of milk in a saucepan.

    Heat over a gentle heat whisking constantly until it comes to the boil.

    Mix defrosted spinach, peas and kale and leftover turkey in a oven proof dish and season with salt and pepper.

    Decrust half a loaf of white bread and cube the slices of bread, toss with 2 tablespoons of melted butter and a sprig of thyme.

    Bake for 30 minutes at 375 degrees.
